There are four different types of eggs: Gold, White, Brown and Rotten. White eggs are the most common, then Brown, then Gold and Rotten. Rotten Eggs only appear in Resident Evil 5.
In Resident Evil 4, in game they are called "White Chicken Egg", "Brown Chicken Egg", and "Gold Chicken Egg", In Resident Evil 5 they are titled as "Egg (White)", "Egg (Brown)", "Egg (Gold)", and "Egg (Rotten)"
In-game, chickens will randomly lay different types of eggs and drop one when killed in both Mercenaries games. Killing snakes will make them drop eggs. The drop rate of eggs is the same from snakes and chickens.
In-game, in both games eggs can either be eaten for health recovery or thrown as weapons. In Resident Evil 4, all eggs take up 1 space in the attache case. When equipped in the Inventory Menu, Leon will playfully throw the egg up and down in one hand. In Resident Evil 5, they're organized in stacks of 5 of one kind, stored in one space in the inventory system.
Gold, White, and Brown eggs have a chance of stunning an enemy when thrown at them and do 300 damage each in Resident Evil 5, Rotten eggs will kill regular Majinis no matter how much health they have.
In Resident Evil 5, killing a Majini with an egg unlocks the "Egg on your Face" achievement/trophy. Collecting all four kinds of eggs unlocks the "Egg Hunt" achievement/trophy.

Eggs in Resident Evil 5 can only heal the person holding them, unlike herbs and sprays which can heal both characters. Throwing eggs at your partner will stun him/her if Friendly Fire is on.

Other gameplay usagesEdit
Eggs can be aimed and thrown at enemies as weapons, and use the same animations as grenades. They are not deadly in Resident Evil 4, though hitting a Ganado in the head with an egg will cause them to cover their faces, making their susceptible to Action commands. Further, should an enemy be standing over a ledge; performing a jumping or climbing animation, egg shots will cause them to fall.
In Resident Evil 5, the Rotten Egg, which lowers the player's health, can be used as powerful weapons against enemies, and direct hits will kill any Majini, preventing their Plagas from being released (and using more ammunition). It is recommended to closely examine what eggs are while on Professional mode, as eating them will send the player straight into DYING mode.

In Resident Evil 5, there is a "Rotten Egg exploit" (both systems work), where when one player gives a rotten egg via online play. The person who received the egg can quit the game and save. The person who gave the egg cannot. You can keep doing this to get all your inventory spaces filled. Once sold, a full inventory of rotten eggs can be sold for 90,000 money. Also works Offline via Split Screen mode, but requires two gamertags on the same console.
